- 1 medium butternut squash, peeled and cubed
- 2 onions, sliced
- 2 cups shredded cheese (e.g., mozzarella, cheddar)
- 1 tablespoon fresh sage, chopped
- 4 tablespoons olive oil
- Salt and pepper to taste
- 1 cup breadcrumbs (optional for topping)
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the cubed butternut squash with 2 tablespoons of olive oil, salt, and pepper. Spread it on a baking sheet and roast for 25-30 minutes until tender.
- In a skillet, heat the remaining olive oil over medium heat and caramelize the onions until golden brown.
- In a mixing bowl, combine the roasted butternut squash, caramelized onions, cheese, and fresh sage.
- Transfer the mixture into a baking dish. If desired, sprinkle breadcrumbs on top.
- Bake in the preheated oven for 20-25 minutes until the cheese is bubbling and golden.
- Serve warm as a main or side dish.
Notes
