Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 2 onions, sliced
  • 2 cups shredded cheese (e.g., mozzarella, cheddar)
  • 1 tablespoon fresh sage, chopped
  • 4 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup breadcrumbs (optional for topping)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cubed butternut squash with 2 tablespoons of olive oil, salt, and pepper. Spread it on a baking sheet and roast for 25-30 minutes until tender.
  3. In a skillet, heat the remaining olive oil over medium heat and caramelize the onions until golden brown.
  4. In a mixing bowl, combine the roasted butternut squash, caramelized onions, cheese, and fresh sage.
  5. Transfer the mixture into a baking dish. If desired, sprinkle breadcrumbs on top.
  6. Bake in the preheated oven for 20-25 minutes until the cheese is bubbling and golden.
  7. Serve warm as a main or side dish.
