  • 1 large butternut squash, peeled and cubed
  • 1 large onion, thinly sliced
  • 2 cups shredded cheese (cheddar or gruyere)
  • 1/4 cup fresh sage, chopped
  • Salt and pepper to taste
  • Olive oil for roasting
  • 1/4 cup breadcrumbs (optional for topping)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the cubed butternut squash and sliced onions in olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven for 25-30 minutes until tender, stirring halfway through.
  3. In a large mixing bowl, combine the roasted squash, onions, cheese, and fresh sage. Mix well.
  4. Transfer the mixture to a greased casserole dish and spread evenly.
  5. Sprinkle breadcrumbs on top if using.
  6. Bake at 350°F (175°C) for 20-25 minutes until the cheese is melted and bubbly.
  7. Serve warm as a main or side dish.
