- 1 large butternut squash, peeled and cubed
- 1 large onion, thinly sliced
- 2 cups shredded cheese (cheddar or gruyere)
- 1/4 cup fresh sage, chopped
- Salt and pepper to taste
- Olive oil for roasting
- 1/4 cup breadcrumbs (optional for topping)
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the cubed butternut squash and sliced onions in olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven for 25-30 minutes until tender, stirring halfway through.
- In a large mixing bowl, combine the roasted squash, onions, cheese, and fresh sage. Mix well.
- Transfer the mixture to a greased casserole dish and spread evenly.
- Sprinkle breadcrumbs on top if using.
- Bake at 350°F (175°C) for 20-25 minutes until the cheese is melted and bubbly.
- Serve warm as a main or side dish.
