Ingredients

  • 600 grams chicken breast, cut into chunks
  • ⅓ cup yogurt
  • ¾ teaspoon turmeric powder
  • 1 teaspoon Kashmiri chili powder (or paprika for less heat)
  • 1 teaspoon garam masala
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon ghee (or melted butter)
  • 1 teaspoon salt
  • 75 grams butter (or 5 tablespoons)
  • ½ cup raw cashews, soaked
  • 1 cup tomato puree
  • 2 tablespoons honey
  • 2 tablespoons kasuri methi (dried fenugreek leaves)
  • 1 tablespoon cream
  • Additional salt to taste

Instructions

  1. Marinate the Chicken: In a bowl, mix yogurt, turmeric, chili powder, garam masala, ginger-garlic paste, salt, and chicken. Cover and refrigerate for at least 30 minutes, preferably overnight.
  2. Grill Chicken: Preheat grill. Skewer chicken and cook until nicely charred, turning occasionally. Set aside.
  3. Make Cashew Paste: Blend soaked cashews with a little water to a smooth consistency.
  4. Prepare Sauce: Melt butter in a heavy-bottom pot. Sauté ginger-garlic paste, turmeric, and chili powder briefly. Add tomato puree, leftover marinade, kasuri methi, and garam masala.
  5. Blend Sauce: Incorporate cashew paste and honey. Use a stick blender to create a smooth sauce texture.
  6. Combine and Cook: Add grilled chicken to the sauce, sprinkle with salt, and simmer for 3-4 minutes. Stir in cream, then continue simmering for another 5-6 minutes until the chicken is well-coated.

Notes

Consider using Greek yogurt for a healthier option or adding more veggies to the dish.
