Ingredients

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano or mixed herbs
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 23 medium potatoes
  • 2 tablespoons olive oil (divided)
  • 500 grams lean beef mince
  • Lettuce (shredded)
  • Cheese (dairy-free or regular)
  • Pickle slices
  • 4 tablespoons mayonnaise
  • 1 tablespoon ketchup
  • 1 teaspoon mustard (Dijon or yellow)
  • 1 teaspoon pickle juice (from the jar of pickles)
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika

Instructions

  1. Prepare the Spice Mix: In a small bowl, mix together the smoked paprika, garlic powder, onion powder, dried herbs, salt, and black pepper. Set aside.
  2. Prep the Potatoes: Wash and cut the potatoes into chips. Pat them dry with paper towels and toss them in a large mixing bowl with 1 tablespoon of olive oil and half the spice mix until well-coated.
  3. Bake the Chips: Spread the potato chips on a baking tray. Bake in a preheated oven at 200°C (390°F) for 30-40 minutes or use an air fryer for about 20 minutes until golden and crispy.
  4. Cook the Beef: In a frying pan, heat the remaining olive oil over high heat. Add the beef mince, breaking it apart with a wooden spoon. Once it’s browned, add the remaining spice mix and continue cooking until the meat is darkened and any excess moisture has evaporated.
  5. Make the Burger Sauce: Combine the mayonnaise, ketchup, mustard, pickle juice, garlic powder, and smoked paprika in a small bowl. Taste and adjust the seasoning as needed.
  6. Assemble the Bowls: Once the potatoes are ready, divide them among individual bowls. Fill with shredded lettuce, cooked beef mince, cheese, and pickles. Drizzle the burger sauce on top and serve immediately.

Notes

To keep the crispy potatoes fresh, reheat them in an air fryer or oven rather than the microwave. Consider freezing the cooked beef and baked potato chips for longer storage.
