Description

Spicy and satisfying Buffalo Chicken Lettuce Wraps offer the bold flavors of buffalo chicken wings wrapped in crisp lettuce, making for a guilt-free treat.


Ingredients

  • 2 large chicken breasts (cooked and shredded)
  • 2 tablespoons butter
  • ½ tablespoon olive oil
  • ½ cup Frank’s Red Hot Wing Sauce
  • ½ teaspoon celery seed
  • Fresh pepper to taste
  • ½ cup thinly sliced celery
  • Blue cheese crumbles (as desired)
  • Ranch dressing (to drizzle)
  • 2 heads of lettuce (romaine or iceberg, rinsed and patted dry)

Instructions

  1. In a large pan over medium-high heat, place the chicken breasts with ½ cup of water. Shred the chicken with two forks until fully cooked and the water evaporates.
  2. Keep the pan on medium-low heat. Add the butter and olive oil, stirring until melted and mixed well.
  3. Add the Frank’s Red Hot Wing Sauce and celery seed. Mix, then season with fresh pepper to taste.
  4. Remove from heat and fold in the thinly sliced celery for added crunch.
  5. Scoop a generous spoonful of the chicken filling into each lettuce leaf, sprinkle with blue cheese crumbles, and drizzle some ranch dressing on top.
