- 12 oz semisweet chocolate chips
- 11.5 oz milk chocolate chips
- 1 tablespoon coconut oil
Instructions
- Prepare the Baking Sheet: Line a large baking sheet with parchment paper.
- Mix the Base: Cream together the softened butter and creamy peanut butter until silky smooth.
- Add Flavor: Incorporate the vanilla extract and sea salt, mixing until well combined.
- Add the Sugar: Gradually add the powdered sugar in 1/3 cup increments, mixing well after each addition.
- Shape the Dough: Scoop tablespoon-sized portions and roll into balls.
- Chill the Balls: Insert a toothpick into each ball and refrigerate for 15 minutes to an hour.
- Melt the Chocolate: Melt the semisweet and milk chocolate chips with the coconut oil.
- Dip the Balls: Dip each chilled ball into the melted chocolate, covering about 80%.
- Set the Buckeyes: Place on the baking sheet and let cool until the chocolate is set.
- Final Touch: Remove toothpicks and smooth over holes with your finger.
- Serve & Enjoy: Store in an airtight container or enjoy immediately.
