- 2 chicken breasts, diced
- 8 oz pasta (penne or rotini)
- 2 cups cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Cook the pasta according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat.
- Add the diced chicken to the skillet. Cook until browned and thoroughly cooked—about 5-7 minutes.
- Stir in the minced garlic, cooking for an additional minute until fragrant.
- Add in the halved cherry tomatoes and cook until softened, about 3-4 minutes.
- Combine the cooked pasta with the chicken and tomato mixture in the skillet. Stir until well mixed.
- Gently fold in the fresh basil and season with salt and pepper to taste.
- Serve hot, topped with freshly grated Parmesan cheese.
Notes
For added flavor, marinate the chicken in Italian seasoning or balsamic vinegar before cooking. Serve with garlic bread and a green salad for a complete meal.
