- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 vanilla bean, split and scraped
- 1/4 cup sour cream
- 1/2 cup brown butter, cooled
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, combine the graham cracker crumbs with the melted butter. Mix until well combined, then press into the bottom of a springform pan to form the crust.
- In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition.
- Gently stir in the vanilla extract, vanilla bean seeds, sour cream, and cooled brown butter until fully combined.
- Pour the filling over the prepared crust in the springform pan.
- Bake for 55-60 minutes, or until the center is set but slightly jiggly.
- Turn off the oven and crack the door open. Let the cheesecake cool inside for about an hour.
- Chill the cheesecake in the refrigerator for at least 4 hours before serving.
Notes
Consider topping with fresh berries or whipped cream. Store covered in the refrigerator for up to 5 days.
