Description

A delightful treat combining creamy Greek yogurt with sweet-tart blueberries, perfect for a refreshing snack or healthy dessert.


Ingredients

  • 1 cup Greek yogurt
  • 1/2 cup blueberries (fresh or frozen)
  • 2 tbsp honey or maple syrup
  • 1 tsp lemon juice
  • 1/2 tsp vanilla extract
  • 1 tsp cornstarch (optional for thickening)

Instructions

  1. In a small saucepan, combine the blueberries, honey, and lemon juice. Simmer over medium heat for about 5 minutes until the blueberries soften.
  2. If using, dissolve cornstarch in a tablespoon of water. Stir this mixture into the blueberries to thicken. Once thickened, remove from heat and let cool completely.
  3. While that cools, mix the Greek yogurt with vanilla extract in a bowl until smooth. Adjust sweetness with additional honey or maple syrup if desired.
  4. Spoon the yogurt mixture into silicone molds or mini muffin tins, filling about three-quarters full.
  5. Top each yogurt portion with a spoonful of the cooled blueberry compote. Swirl gently with a toothpick to create a marbled effect.
  6. Freeze for at least 3 hours or until solid.
  7. Remove the bites from the molds and store them in an airtight container in the freezer. For the best texture, let them sit for 2–3 minutes before enjoying.
