- 1 cup Greek yogurt
- 1/2 cup blueberries (fresh or frozen)
- 2 tbsp honey or maple syrup
- 1 tsp lemon juice
- 1/2 tsp vanilla extract
- 1 tsp cornstarch (optional for thickening)
Instructions
- In a small saucepan, combine the blueberries, honey, and lemon juice. Simmer over medium heat for about 5 minutes until the blueberries soften.
- If using, dissolve cornstarch in a tablespoon of water. Stir this mixture into the blueberries to thicken. Once thickened, remove from heat and let cool completely.
- While that cools, mix the Greek yogurt with vanilla extract in a bowl until smooth. Adjust sweetness with additional honey or maple syrup if desired.
- Spoon the yogurt mixture into silicone molds or mini muffin tins, filling about three-quarters full.
- Top each yogurt portion with a spoonful of the cooled blueberry compote. Swirl gently with a toothpick to create a marbled effect.
- Freeze for at least 3 hours or until solid.
- Remove the bites from the molds and store them in an airtight container in the freezer. For the best texture, let them sit for 2–3 minutes before enjoying.
