- 2 cups rolled oats
- 1 cup mashed bananas or applesauce
- 1/2 cup honey or maple syrup
- 1 cup fresh or frozen blueberries
- 1/4 cup almond butter or peanut butter
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish.
- In a large bowl, combine the rolled oats, mashed bananas or applesauce, honey (or maple syrup), almond butter (or peanut butter), vanilla extract, baking powder, salt, and cinnamon.
- Mix until all ingredients are well incorporated.
- Gently fold in the blueberries, ensuring they remain whole.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Bake for 20-25 minutes or until the bars are golden brown on top.
- Allow to cool in the pan before cutting into bars. Enjoy!
