  • 1 cup mashed bananas or applesauce
  • 1/2 cup honey or maple syrup
  • 1 cup fresh or frozen blueberries
  • 1/4 cup almond butter or peanut butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, combine the rolled oats, mashed bananas or applesauce, honey (or maple syrup), almond butter (or peanut butter), vanilla extract, baking powder, salt, and cinnamon.
  3. Mix until all ingredients are well incorporated.
  4. Gently fold in the blueberries, ensuring they remain whole.
  5. Pour the mixture into the prepared baking dish and spread it evenly.
  6. Bake for 20-25 minutes or until the bars are golden brown on top.
  7. Allow to cool in the pan before cutting into bars. Enjoy!
