Description

A delightful blend of sweet blueberries and zesty lemon that makes for a nutritious snack or breakfast option.


Ingredients

  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 1 large egg
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • Zest of 1 large lemon (about 1 tbsp)
  • 1/2 tsp baking powder
  • A pinch of salt
  • 3/4 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 24-cup mini muffin pan.
  2. In a blender or food processor, combine the cottage cheese, oats, egg, honey or maple syrup, vanilla extract, lemon zest, baking powder, and salt. Blend until smooth.
  3. Pour the batter into a bowl and gently fold in the blueberries.
  4. Allow the batter to rest for about 5 minutes.
  5. Divide the batter among the mini muffin cups, filling each about three-quarters full.
  6. Bake for 18-22 minutes, or until firm and lightly golden on top.
  7. Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

These bites can be stored in the refrigerator for up to a week or frozen for up to three months. Reheat before serving.
