Description

A soft, moist bread with a sweet and tangy cream cheese filling and bursts of blueberries, perfect for breakfast or dessert.


Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk (or buttermilk)
  • 1 cup fresh or frozen blueberries (tossed in 1 tablespoon flour)
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar (for filling)
  • 1 large egg (for filling)
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream the softened butter and granulated sugar together until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Start and end with the flour mixture. Mix until just combined, then gently fold in the blueberries.
  6. In another bowl, beat the softened cream cheese, sugar, egg, and vanilla until smooth.
  7. Pour half of the bread batter into the prepared pan. Spread the cream cheese mixture evenly on top, then carefully add the remaining batter.
  8. Bake for 55-65 minutes, or until a toothpick inserted comes out clean. If browning too quickly, cover loosely with foil during the last 15 minutes.
  9. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

If storing leftovers, wrap the bread in plastic wrap or foil. It can be kept at room temperature for up to three days, or frozen for up to three months.
