Description
A quick and delicious breakfast featuring sweet and creamy filling with juicy blueberries and cream cheese nestled in crispy tortillas.
Ingredients
Scale
- 2 large flour tortillas
- 1 cup fresh blueberries (or frozen, thawed and drained)
- ¼ cup cream cheese (softened) or shredded mild cheese (like mozzarella or mild cheddar)
- 2 tsp granulated sugar (adjust based on your sweetness preference)
- ½ tsp vanilla extract (optional)
- ¼ tsp ground cinnamon (optional)
- 1 tbsp butter or oil for cooking
Instructions
- If using frozen blueberries, ensure they are fully thawed and drained of excess liquid.
- In a small bowl, gently toss the blueberries with sugar, vanilla extract, and cinnamon, if desired.
- Spread the softened cream cheese on one half of each tortilla, or sprinkle the shredded cheese evenly.
- Place the sweetened blueberries on top of the cheese and fold the tortilla in half.
- Heat the butter or oil in a skillet over medium heat.
- Cook the quesadilla for about 2 to 3 minutes on each side, pressing gently with a spatula. If the cheese isn’t melting, cover the skillet briefly for 30 to 45 seconds.
- Remove from heat, slice into wedges, and serve with chosen toppings.
Notes
Serve with warm maple syrup, honey, or a dusting of powdered sugar. Fresh berries on the side enhance flavor and presentation.
