  • ½ tsp vanilla extract (optional)
  • ¼ tsp ground cinnamon (optional)
  • 1 tbsp butter or oil for cooking

Instructions

  1. If using frozen blueberries, ensure they are fully thawed and drained of excess liquid.
  2. In a small bowl, gently toss the blueberries with sugar, vanilla extract, and cinnamon, if desired.
  3. Spread the softened cream cheese on one half of each tortilla, or sprinkle the shredded cheese evenly.
  4. Place the sweetened blueberries on top of the cheese and fold the tortilla in half.
  5. Heat the butter or oil in a skillet over medium heat.
  6. Cook the quesadilla for about 2 to 3 minutes on each side, pressing gently with a spatula. If the cheese isn’t melting, cover the skillet briefly for 30 to 45 seconds.
  7. Remove from heat, slice into wedges, and serve with chosen toppings.
