- 2 medium chicken breasts (or boneless, skinless thighs)
- 1 tablespoon extra virgin olive oil (or avocado/grapeseed oil)
- 1 medium yellow or white onion
- 1 can (14.5 oz) diced tomatoes (with juices)
- 2 tablespoons tomato paste
- 1 can (15 oz) pumpkin puree
- 1 can (13.5 oz) unsweetened full-fat coconut milk
- Juice from one small lemon
- 1 tablespoon brown sugar (light or dark)
- 2 tablespoons curry powder
- 2 teaspoons mild chili powder
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- ½ teaspoon ground cumin
- ½ teaspoon ground mustard seed
- ½ teaspoon ground coriander seed
- ½ teaspoon ground cinnamon
Instructions
- Prepare the Chicken: Dice the chicken into small pieces (½ inch to 1 inch). Place in a bowl, drizzle with olive oil, and season generously with salt and pepper. Toss to coat.
- Sauté Chicken: Heat a large skillet over medium heat. Cook the chicken in 2-3 batches to avoid overcrowding. Once cooked through, transfer the chicken to a bowl.
- Cook Onions: In the same skillet, add diced onion. Deglaze the pan with a bit of water or additional olive oil. Sauté the onion for 2-3 minutes until soft and translucent.
- Combine Ingredients: Add diced tomatoes (with juices), tomato paste, pumpkin puree, coconut milk, and lemon juice to the skillet. Stir well to combine.
- Add Spices: Mix in brown sugar and all the seasonings, stirring until everything is well incorporated. Then return the cooked chicken to the pan.
- Simmer: Cover the skillet with a lid, reduce heat to low, and let it simmer for 10-15 minutes.
- Serve: Serve over your preferred grain or legume and top with cilantro, red pepper flakes, or extra coconut milk if desired.
Notes
Best served over rice, quinoa, or cauliflower rice. Can be topped with fresh cilantro and red pepper flakes for added flavor.
