- 1/2 cup sugar
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1 cup graham cracker crumbs
- 1/4 cup butter, melted
- 1 egg

Instructions
- Preheat your oven to 325°F (160°C).
- Prepare the crust: In a bowl, mix graham cracker crumbs with melted butter. Press this mixture firmly into the bottom of lined mini cupcake tins.
- Make the filling: In another bowl, beat together the softened cream cheese, sugar, and vanilla extract until it’s nice and smooth.
- Add the sour cream and mix until fully combined.
- Incorporate the egg, being careful not to overmix.
- Pour the cheesecake mixture over the crusts in the mini tins, filling each about three-quarters full.
- Bake for 15-20 minutes or until the cheesecakes are set but still slightly jiggly in the center.
- Cool them down, then refrigerate for at least 2 hours before serving.
- Top with your favorite fruits, chocolate, or sprinkles before enjoying!
