- 1 lb ground beef or sausage (or meat substitute)
- 1 chopped onion
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 1 can tomato sauce
- 4 cups chicken or vegetable broth
- 6 lasagna noodles, broken into pieces
- 1 tsp Italian seasoning (oregano, basil, thyme)
- Salt and pepper to taste
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Fresh basil or parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, cooking until fragrant and onion is translucent.
- Add ground beef or sausage; cook until browned. Drain excess fat if necessary.
- Stir in diced tomatoes, tomato sauce, and broth. Bring to a gentle simmer.
- Add broken lasagna noodles along with Italian seasoning, salt, and pepper. Let simmer for about 10-12 minutes or until noodles are tender.
- Reduce heat to low, stir in ricotta cheese until melted and creamy.
- Serve immediately and top with shredded mozzarella cheese. Allow residual heat to melt the cheese slightly.
- Garnish with fresh basil or parsley before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days, or freeze portions for up to three months.
