Ingredients

  • 1 can condensed cream of mushroom soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese (optional)
  • 1 tablespoon soy sauce
  • 2 cups fried onions, plus more for topping
  • Black pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Blanch the green beans: Boil a pot of water, add a pinch of salt, and cook the green beans for 4-5 minutes until vibrant green. Drain and rinse under cold water.
  3. Make the sauce: In a large bowl, mix the cream of mushroom soup, sour cream, soy sauce, and black pepper until smooth. Stir in the cheese if using.
  4. Combine: Add the blanched green beans and 1 cup of fried onions to the sauce mixture. Gently toss to coat the beans evenly.
  5. Transfer to a baking dish: Pour the green bean mixture into a greased casserole dish, spreading it evenly. Top with remaining fried onions.
  6. Bake: Place the casserole in the oven and bake for about 25-30 minutes, or until bubbly and golden on top.
  7. Cool slightly: Let it sit for a few minutes before serving to set.

Notes

For a lighter version, omit the cheddar cheese. You can also use frozen green beans if needed.
