- 2–3 medium Russet or Yukon Gold potatoes
- 1 large onion, diced
- 2–3 cloves garlic, minced
- 4 tablespoons butter
- 1/4 cup flour
- 4 cups chicken or vegetable broth
- 1–2 cups milk or cream (depending on desired richness)
- Salt and pepper to taste
- Optional herbs: thyme or rosemary
- Toppings: shredded cheese, chopped chives, bacon bits, or dollops of sour cream
Instructions
- In a large pot, melt the butter over medium heat. Add the diced onion and sauté for 5 minutes until translucent. Stir in the minced garlic and cook for an additional minute.
- Sprinkle the flour over the onion and garlic mixture, stirring constantly for about 2 minutes to create a roux that thickens the soup.
- Gradually pour in the chicken or vegetable broth, whisking continuously to remove any lumps from the flour.
- Dice the potatoes and add them to the pot. Bring the soup to a gentle simmer and cook for 15-20 minutes, or until the potatoes are fork-tender.
- Use an immersion blender to puree the soup until smooth. For more texture, blend only half of the soup or mash some of the potatoes with a fork before blending.
- Stir in the milk or cream, adjusting to your desired creaminess. Season with salt, pepper, and herbs to taste. Heat through but avoid boiling after adding the dairy.
- Ladle the soup into bowls and top with your choice of cheese, chives, or bacon bits.
Notes
Serve with crusty bread or a fresh salad. For special occasions, add crispy bacon and freshly chopped herbs on top.
