  • 1 large onion, diced
  • 23 cloves garlic, minced
  • 4 tablespoons butter
  • 1/4 cup flour
  • 4 cups chicken or vegetable broth
  • 12 cups milk or cream (depending on desired richness)
  • Salt and pepper to taste
  • Optional herbs: thyme or rosemary
  • Toppings: shredded cheese, chopped chives, bacon bits, or dollops of sour cream

Instructions

  1. In a large pot, melt the butter over medium heat. Add the diced onion and sauté for 5 minutes until translucent. Stir in the minced garlic and cook for an additional minute.
  2. Sprinkle the flour over the onion and garlic mixture, stirring constantly for about 2 minutes to create a roux that thickens the soup.
  3. Gradually pour in the chicken or vegetable broth, whisking continuously to remove any lumps from the flour.
  4. Dice the potatoes and add them to the pot. Bring the soup to a gentle simmer and cook for 15-20 minutes, or until the potatoes are fork-tender.
  5. Use an immersion blender to puree the soup until smooth. For more texture, blend only half of the soup or mash some of the potatoes with a fork before blending.
  6. Stir in the milk or cream, adjusting to your desired creaminess. Season with salt, pepper, and herbs to taste. Heat through but avoid boiling after adding the dairy.
  7. Ladle the soup into bowls and top with your choice of cheese, chives, or bacon bits.
