  • 1 can (15 oz) sweet corn, drained
  • 1 packet ranch seasoning
  • 2 cups beef broth
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Optional toppings: chopped green onions

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat and drain any excess fat.
  3. Stir in the uncooked rice, ranch seasoning, corn, beef broth, salt, and pepper.
  4. Bring this mixture to a gentle boil, then reduce the heat. Cover and let it simmer for about 15 minutes or until the rice is tender.
  5. Transfer the contents to a greased baking dish, adding a generous layer of shredded cheese on top.
  6. Bake in the oven for 20 minutes or until the cheese is bubbly and golden.
  7. If you like, garnish with chopped green onions before serving to add a fresh touch.
