- Salt, to taste
- Black pepper, to taste
Instructions
- Cook the tortellini according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add chopped onion and minced garlic; sauté until softened.
- Add ground beef, chili powder, cumin, salt, and pepper. Cook until the beef is browned.
- Stir in the enchilada sauce and bring to a simmer.
- Combine the cooked tortellini with the beef mixture.
- Top with shredded cheddar cheese and let it melt.
