Description

A warm and soul-satisfying bean with bacon soup, perfect for chilly evenings and family gatherings.


Ingredients

  • 1 cup Great Northern beans (dried)
  • 6 oz thick-cut bacon
  • 1 medium onion (chopped)
  • 2 carrots (chopped)
  • 2 celery stalks (chopped)
  • 3 cloves garlic (minced)
  • 4 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Rinse the beans under cold water and soak overnight if using dried beans.
  2. In a large pot, cook the bacon over medium heat until crispy. Remove bacon but leave drippings.
  3. Add onion, carrots, and celery to the drippings and sauté for about 5 minutes until softened. Add garlic and sauté for 1 more minute.
  4. Return the crispy bacon to the pot and add soaked beans, chicken broth, thyme, salt, and pepper. Bring to a boil.
  5. Reduce heat and let it simmer for about 60 minutes or until beans are tender.
  6. Serve hot, garnished with fresh parsley if desired.

Notes

For a vegetarian version, substitute bacon with smoked paprika and use vegetable broth.
