A warm and soul-satisfying bean with bacon soup, perfect for chilly evenings and family gatherings.
Ingredients

- 1 cup Great Northern beans (dried)
- 6 oz thick-cut bacon
- 1 medium onion (chopped)
- 2 carrots (chopped)
- 2 celery stalks (chopped)
- 3 cloves garlic (minced)
- 4 cups low-sodium chicken broth
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Rinse the beans under cold water and soak overnight if using dried beans.
- In a large pot, cook the bacon over medium heat until crispy. Remove bacon but leave drippings.
- Add onion, carrots, and celery to the drippings and sauté for about 5 minutes until softened. Add garlic and sauté for 1 more minute.
- Return the crispy bacon to the pot and add soaked beans, chicken broth, thyme, salt, and pepper. Bring to a boil.
- Reduce heat and let it simmer for about 60 minutes or until beans are tender.
- Serve hot, garnished with fresh parsley if desired.
Notes
For a vegetarian version, substitute bacon with smoked paprika and use vegetable broth.
