- 2 cups cooked shredded chicken
- 1/2 cup barbecue sauce (your favorite brand)
- 2 cups shredded cheddar cheese (or mix it up with Monterey Jack)
- 4 large flour tortillas (whole wheat can work too)
- 1/4 cup chopped green onions (optional, but recommended for a fresh crunch)
- 2 tablespoons olive oil
Instructions
- In a large bowl, mix the cooked shredded chicken with the barbecue sauce until it’s evenly coated.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Place one tortilla into the skillet. Sprinkle 1/2 cup of shredded cheese over half of the tortilla.
- Add 1/2 cup of the BBQ chicken mixture over the cheese, then top it off with another 1/2 cup of cheese.
- Fold the tortilla in half and cover it with another tortilla. Cook for about 3-4 minutes until the bottom is golden and the cheese starts melting.
- Carefully flip the quesadilla and cook the other side for another 3-4 minutes until golden brown and fully melted.
- Remove from the skillet and repeat with the remaining tortillas and filling.
- Slice into wedges, garnish with chopped green onions if desired, and serve warm.
Notes
For crunchier quesadillas, pre-cook the tortillas in the skillet for a minute on each side before adding the fillings. Consider adding jalapeños for spice or using whole grain tortillas for a healthier option.
