Ingredients

  • 1 cup granulated sugar
  • 1 tbsp orange zest (freshly grated)
  • ¾ cup fresh orange juice
  • ¼ cup melted butter
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1½ cups fresh cranberries (or frozen)
  • Powdered sugar (optional for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together the flour, baking powder, salt, and sugar until well combined.
  3. In another bowl, combine the orange juice, melted butter, eggs, and vanilla extract. Stir until blended.
  4. Pour the wet ingredients into the dry ingredients, mixing just until combined—don’t overmix!
  5. Gently fold in the cranberries.
  6. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  7. Bake for 50–60 minutes or until a toothpick comes out clean from the center.
  8. Cool the loaf in the pan for about 10 minutes before transferring it to a wire rack.
  9. Dust with powdered sugar if desired, slice, and serve!

Notes

Optionally serve with cream cheese or butter on top, and pair with fresh fruit or yogurt for a balanced meal.
