- 2 cups all-purpose flour
- 2 tsp baking powder
- ½ tsp salt
- 1 cup granulated sugar
- 1 tbsp orange zest (freshly grated)
- ¾ cup fresh orange juice
- ¼ cup melted butter
- 2 large eggs
- 1 tsp vanilla extract
- 1½ cups fresh cranberries (or frozen)
- Powdered sugar (optional for dusting)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, whisk together the flour, baking powder, salt, and sugar until well combined.
- In another bowl, combine the orange juice, melted butter, eggs, and vanilla extract. Stir until blended.
- Pour the wet ingredients into the dry ingredients, mixing just until combined—don’t overmix!
- Gently fold in the cranberries.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake for 50–60 minutes or until a toothpick comes out clean from the center.
- Cool the loaf in the pan for about 10 minutes before transferring it to a wire rack.
- Dust with powdered sugar if desired, slice, and serve!
Notes
Optionally serve with cream cheese or butter on top, and pair with fresh fruit or yogurt for a balanced meal.
