Instructions

  1. Marinate the Chicken: Cut the chicken breasts into bite-sized pieces. In a large bowl, whisk together buttermilk, garlic powder, onion powder, paprika, salt, and black pepper. Add the chicken pieces, ensuring they’re well coated, and cover. Refrigerate for at least 1 hour (up to overnight).
  2. Make the Bang Bang Sauce: In a medium bowl, combine mayonnaise, sweet chili sauce, sriracha, honey, lime juice, and garlic powder. Whisk until smooth, then taste and adjust the heat or sweetness according to your preference.
  3. Dredge and Fry the Chicken: In a shallow dish, mix flour and panko breadcrumbs. Remove the chicken from the marinade, then dredge each piece in the flour mixture. Heat vegetable oil to 350°F (175°C) and fry the chicken in batches, cooking until golden brown and cooked through, about 3-4 minutes per side. Drain on paper towels.
  4. Assemble the Sliders: Lightly toast the slider buns. Spread Bang Bang sauce on the bottom buns, then layer with fried chicken, shredded lettuce, red onion, and pickles if using. Finish with cilantro and cap with the top bun.
