Description

Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1 cup cooked rice (white, brown, or cauliflower)
  • 1 cup mixed veggies (broccoli, bell peppers, carrots)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha (adjust to taste)
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice

Instructions

  1. Cook the rice according to package instructions and set aside.
  2. Cut the chicken into bite-sized pieces and season with salt and pepper.
  3. In a skillet, heat olive oil over medium-high heat. Add chicken and cook for 6-8 minutes until golden brown and internal temperature reaches 165°F.
  4. In a bowl, combine mayonnaise, sriracha, honey, garlic powder, and lime juice. Adjust seasoning to taste.
  5. Add mixed veggies to the skillet and cook for another 2-3 minutes until vibrant and crisp.
  6. Remove from heat, pour sauce over chicken and veggies, and mix well to coat.
  7. Serve the mixture over rice, garnishing with extra sriracha or green onions if desired.

Notes

For a delightful presentation, serve in a shallow dish and consider topping with sesame seeds or chopped peanuts for an extra crunch. Best when enjoyed fresh, but leftovers can be stored in the fridge for up to 3-4 days.
