- 1 lb boneless, skinless chicken breast
- 1 cup cooked rice (white, brown, or cauliflower)
- 1 cup mixed veggies (broccoli, bell peppers, carrots)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/2 cup mayonnaise
- 2 tablespoons sriracha (adjust to taste)
- 1 tablespoon honey
- 1 teaspoon garlic powder
- 1 teaspoon lime juice
Instructions
- Cook the rice according to package instructions and set aside.
- Cut the chicken into bite-sized pieces and season with salt and pepper.
- In a skillet, heat olive oil over medium-high heat. Add chicken and cook for 6-8 minutes until golden brown and internal temperature reaches 165°F.
- In a bowl, combine mayonnaise, sriracha, honey, garlic powder, and lime juice. Adjust seasoning to taste.
- Add mixed veggies to the skillet and cook for another 2-3 minutes until vibrant and crisp.
- Remove from heat, pour sauce over chicken and veggies, and mix well to coat.
- Serve the mixture over rice, garnishing with extra sriracha or green onions if desired.
Notes
For a delightful presentation, serve in a shallow dish and consider topping with sesame seeds or chopped peanuts for an extra crunch. Best when enjoyed fresh, but leftovers can be stored in the fridge for up to 3-4 days.
