Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1 cup cooked rice
  • 1 cup mixed veggies (broccoli, bell peppers, carrots)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice

Instructions

  1. Cook rice according to package instructions and set aside.
  2. Cut chicken breast into bite-sized pieces and season with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken and sauté until golden brown and cooked through, about 6-8 minutes.
  4. In a small bowl, mix together the sauce ingredients and adjust seasoning to taste.
  5. Toss mixed veggies with the chicken in the skillet and cook for an additional 2-3 minutes until tender.
  6. Remove from heat and pour the sauce over the chicken and veggies, stirring to coat evenly.
  7. Serve over rice, garnishing with extra sriracha or chopped green onions if desired.

Notes

For a vegetarian option, substitute chicken with tofu. Feel free to prep the sauce and chop veggies in advance.
