- 1 cup cooked rice
- 1 cup mixed veggies (broccoli, bell peppers, carrots)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/2 cup mayonnaise
- 2 tablespoons sriracha
- 1 tablespoon honey
- 1 teaspoon garlic powder
- 1 teaspoon lime juice
Instructions
- Cook rice according to package instructions and set aside.
- Cut chicken breast into bite-sized pieces and season with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and sauté until golden brown and cooked through, about 6-8 minutes.
- In a small bowl, mix together the sauce ingredients and adjust seasoning to taste.
- Toss mixed veggies with the chicken in the skillet and cook for an additional 2-3 minutes until tender.
- Remove from heat and pour the sauce over the chicken and veggies, stirring to coat evenly.
- Serve over rice, garnishing with extra sriracha or chopped green onions if desired.
Notes
For a vegetarian option, substitute chicken with tofu. Feel free to prep the sauce and chop veggies in advance.
