- 1 lb boneless, skinless chicken breast (diced into bite-sized pieces)
- 1 cup cooked rice (white, brown, or cauliflower)
- 1 cup mixed veggies (broccoli, bell peppers, and carrots)
- 2 tablespoons olive oil
- Salt and pepper (to taste)
- 1/2 cup mayonnaise
- 2 tablespoons sriracha
- 1 tablespoon honey
- 1 teaspoon garlic powder
- 1 teaspoon lime juice
Instructions
- Cook the rice according to the package instructions and set aside.
- Cut chicken into bite-sized pieces and season with salt and pepper.
- Heat olive oil in a skillet over medium-high heat and sauté chicken for about 6-8 minutes until fully cooked.
- whisk together mayonnaise, sriracha, honey, garlic powder, and lime juice to make the sauce.
- Once chicken is cooked, add mixed veggies and cook for another 2-3 minutes.
- Remove from heat and stir in the sauce until everything is well coated. Serve over rice.
Notes
For a lighter option, substitute mayonnaise with Greek yogurt. Adjust sriracha to your spice preference.
