- 1 pound chicken breast, cut into bite-sized pieces
- 1 cup cooked rice (white or brown)
- 2 cups mixed vegetables (bell peppers, carrots, broccoli)
- 1/2 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Chopped green onions for garnish
- Sesame seeds for garnish
Instructions
- Cook the rice according to package instructions and set aside.
- In a large skillet over medium heat, add oil and chicken pieces, seasoning with salt, pepper, and garlic powder.
- Cook chicken for 6-8 minutes until browned and fully cooked.
- Meanwhile, mix mayonnaise, sweet chili sauce, soy sauce, and lime juice in a bowl until smooth.
- Remove cooked chicken and set aside. In the same skillet, add mixed vegetables and cook for 4-5 minutes until tender but crisp.
- Add chicken back to the skillet, pour sauce over, and stir to coat. Cook for an additional 2-3 minutes until heated through.
- Serve by placing rice in a bowl, topping with chicken and veggie mixture, and garnishing with green onions and sesame seeds.
Notes
Adjust the spice level by adding sriracha or red pepper flakes to the sauce. Utilize fresh in-season vegetables for best flavor.
