  • 1/4 cup maple syrup (optional, for added sweetness)
  • 1 egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips or blueberries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. Combine mashed bananas, oats, milk, maple syrup, and the egg in a large bowl. Mix until well blended.
  3. Add baking powder, baking soda, cinnamon, and salt. Stir until combined. If you’re opting for chocolate chips or blueberries, gently fold them in at this stage.
  4. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  5. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  6. Cool for a few minutes before transferring your muffins to a wire rack.
