- 2 ripe bananas, mashed
- 1 cup rolled oats
- 1/2 cup milk (or your favorite dairy alternative)
- 1/4 cup maple syrup (optional, for added sweetness)
- 1 egg
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup chocolate chips or blueberries (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
- Combine mashed bananas, oats, milk, maple syrup, and the egg in a large bowl. Mix until well blended.
- Add baking powder, baking soda, cinnamon, and salt. Stir until combined. If you’re opting for chocolate chips or blueberries, gently fold them in at this stage.
- Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Cool for a few minutes before transferring your muffins to a wire rack.
Notes
These muffins can be served plain or with toppings like peanut butter, fresh banana slices, or honey. Store in an airtight container for up to 3 days or freeze for longer storage.
