Description

Delightful and healthy Banana Oatmeal Bars that make for a perfect snack or breakfast option for any time of the day.


Ingredients

  • 3 ripe bananas (about 1 ½ cups mashed)
  • 2 cups rolled oats
  • ⅓ cup honey or pure maple syrup
  • 2 large eggs
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, mash the ripe bananas until smooth.
  3. Add the rolled oats, honey (or maple syrup), eggs, baking powder, and vanilla extract. Mix until well combined.
  4. Grease an 8×8-inch baking dish or line it with parchment paper.
  5. Pour the mixture into the prepared dish and spread it evenly.
  6. Bake for 25-30 minutes, or until the bars are golden brown on top.
  7. Allow to cool for at least ten minutes before slicing into squares.

Notes

For a firmer texture, add a tablespoon of peanut butter or almond butter to the mixture. Can be stored at room temperature for up to 3 days or frozen for up to 3 months.
