Ingredients

- 3 ripe bananas (about 1 ½ cups mashed)
- 2 cups rolled oats
- ⅓ cup honey or pure maple syrup
- 2 large eggs
- 1 tsp baking powder
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, mash the ripe bananas until smooth.
- Add the rolled oats, honey (or maple syrup), eggs, baking powder, and vanilla extract. Mix until well combined.
- Grease an 8×8-inch baking dish or line it with parchment paper.
- Pour the mixture into the prepared dish and spread it evenly.
- Bake for 25-30 minutes, or until the bars are golden brown on top.
- Allow to cool for at least ten minutes before slicing into squares.
Notes
For a firmer texture, add a tablespoon of peanut butter or almond butter to the mixture. Can be stored at room temperature for up to 3 days or frozen for up to 3 months.
