Description

A delicious and healthy treat combining bananas, oats, and nut butter for a satisfying snack any time of day.


Ingredients

  • 1½ cups mashed bananas (approx. 3 bananas)
  • ½ cup nut butter (peanut, almond, or your favorite)
  • 2 cups rolled oats
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 3 tablespoons maple syrup
  • 1 cup chocolate chips
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 350°F and line a 9×9-inch baking pan with parchment paper.
  2. In a large mixing bowl, combine the mashed bananas, nut butter, rolled oats, cinnamon, vanilla extract, maple syrup, chocolate chips, and salt. Stir until well incorporated.
  3. Pour the mixture into the prepared baking pan and flatten it into an even layer.
  4. Sprinkle additional chocolate chips on top if desired.
  5. Bake for 18-20 minutes or until the edges are golden and the center appears set.
  6. Allow the bars to cool completely in the pan before lifting them out and cutting them into squares.

Notes

For a nut-free version, replace nut butter with sunflower seed butter. Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. They can also be frozen for 2-3 months.
