Ingredients
Scale
- 2 ¾ cups all-purpose flour
- 3 tablespoons granulated sugar
- 1 teaspoon salt
- 1 package active dry yeast (2 ¼ teaspoons)
- ½ cup milk
- ¼ cup water
- 3 tablespoons unsalted butter, melted
- 1 egg
- 1 ripe banana, mashed
- ⅓ cup granulated sugar (for filling)
- 2 teaspoons ground cinnamon
- ¼ cup unsalted butter, softened (for filling)
- 1 banana, sliced (for filling)
- 1 cup powdered sugar (for glaze)
- 1 teaspoon vanilla extract (for glaze)
- 2–3 tablespoons milk (for glaze)
Instructions
- In a large bowl, combine 1 cup of flour with sugar, salt, and yeast.
- In a small saucepan, heat milk, water, and butter until warm (don’t exceed 110°F).
- Pour the warm mixture into the flour mix, and add the egg and mashed banana. Beat until well combined.
- Gradually incorporate the remaining flour, half a cup at a time, until the dough pulls away from the bowl’s sides.
- Flour your counter and knead the dough for about 5-7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place until doubled (about 1 hour).
- In a small bowl, mix together the sugar and cinnamon for the filling.
- Once risen, roll the dough into a rectangle (15×9 inches) and spread softened butter over it. Sprinkle on the cinnamon sugar and layer sliced bananas on top.
- Roll the dough into a log starting from the longer side and slice into 12 equal pieces.
- Place the rolls in a greased 9×13 inch baking pan. Cover and let rise for another 30 minutes.
- Preheat the oven to 375°F and bake for 25-30 minutes until golden brown.
- While the rolls bake, whisk together the powdered sugar, vanilla, and milk until smooth.
- Allow the rolls to cool slightly, then drizzle the glaze on top before serving warm.
