- 4 large eggs
- 200g feta cheese
- 200g cherry tomatoes
- 100g fresh spinach
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- Fresh herbs (optional for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- In a baking dish, toss the cherry tomatoes and spinach together; drizzle with olive oil.
- Crumble feta cheese evenly over the top of the vegetables.
- Create four small wells within the mixture and crack one egg into each well.
- Lightly season with salt and pepper.
- Bake in your preheated oven for about 15-20 minutes, or until the eggs are set but the yolks remain slightly runny.
- If desired, garnish with fresh herbs and serve immediately.
Notes
For a complete meal, serve with crusty bread, a side salad, and your favorite coffee or tea. Store leftovers in an airtight container for up to 2-3 days.
