Ingredients

  • 200g feta cheese
  • 200g cherry tomatoes
  • 100g fresh spinach
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a baking dish, toss the cherry tomatoes and spinach together; drizzle with olive oil.
  3. Crumble feta cheese evenly over the top of the vegetables.
  4. Create four small wells within the mixture and crack one egg into each well.
  5. Lightly season with salt and pepper.
  6. Bake in your preheated oven for about 15-20 minutes, or until the eggs are set but the yolks remain slightly runny.
  7. If desired, garnish with fresh herbs and serve immediately.
