  • 8 taco shells

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the bacon in a skillet over medium heat until crispy, then crumble it.
  3. Boil the potatoes until tender, then season with salt and pepper.
  4. Scramble the eggs in a separate pan over medium-low heat until fluffy.
  5. In taco shells, layer seasoned potatoes, scrambled eggs, crumbled bacon, and cheese.
  6. Place filled shells on a baking sheet and bake for 15-20 minutes until cheese is melted.
