Instructions
- Preheat your oven to 350°F (175°C).
- Cook the bacon in a skillet over medium heat until crispy, then crumble it.
- Boil the potatoes until tender, then season with salt and pepper.
- Scramble the eggs in a separate pan over medium-low heat until fluffy.
- In taco shells, layer seasoned potatoes, scrambled eggs, crumbled bacon, and cheese.
- Place filled shells on a baking sheet and bake for 15-20 minutes until cheese is melted.
- Remove from oven, let cool slightly, and serve warm.
