Ingredients

- 3–4 cups of broccoli florets, finely chopped
- 3–4 cups of cauliflower, finely chopped
- 1/2 cup of red onion, diced
- 1/2 cup of green bell pepper, diced
- 1/2 cup of red sweet pepper, diced
- 1/2 cup of carrots, finely sliced and diced
- 1/2 cup of sweet corn (canned or fresh)
- 10 slices of bacon, cooked, drained, and chopped
- 1 cup of Colby Jack cheese, shredded
Instructions
- In a large bowl, combine the chopped broccoli and cauliflower.
- Add the diced red onion, green bell pepper, red sweet pepper, carrots, and sweet corn to the bowl.
- Mix in the chopped bacon and shredded Colby Jack cheese.
- Toss everything together until well mixed.
- Drizzle your favorite ranch dressing over the salad and toss again to coat all ingredients evenly.
- You can serve immediately, or refrigerate for a little while to let the flavors meld.
Notes
For best results, add dressing just before serving to prevent sogginess. You can customize with different cheeses or add-ins like nuts or avocados.
