- 200g spaghetti (or pasta of your choice)
- 150g bacon, diced
- 2 large eggs
- 1 cup Parmesan cheese, grated
- 1 clove garlic, minced
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook spaghetti according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, cook the diced bacon until crispy, about 5-7 minutes.
- Add the minced garlic to the skillet and cook for about 1 minute until fragrant.
- In a bowl, whisk together the eggs and grated Parmesan until smooth. Season with salt and pepper.
- Combine the cooked pasta in the skillet with bacon and garlic, tossing well to integrate.
- Remove the skillet from heat, and quickly pour the egg and cheese mixture over the hot pasta. Stir continuously to create a creamy sauce.
- Serve immediately, garnished with chopped parsley and additional cheese if desired.
Notes
For a lighter twist, substitute bacon with pancetta or turkey bacon. Serve with a light arugula salad or garlic bread.
