Description

A comforting dish of spaghetti with a rich creamy sauce made from eggs and Parmesan, combined with crispy bacon.


Ingredients

  • 200g spaghetti (or pasta of your choice)
  • 150g bacon, diced
  • 2 large eggs
  • 1 cup Parmesan cheese, grated
  • 1 clove garlic, minced
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook spaghetti according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, cook the diced bacon until crispy, about 5-7 minutes.
  3. Add the minced garlic to the skillet and cook for about 1 minute until fragrant.
  4. In a bowl, whisk together the eggs and grated Parmesan until smooth. Season with salt and pepper.
  5. Combine the cooked pasta in the skillet with bacon and garlic, tossing well to integrate.
  6. Remove the skillet from heat, and quickly pour the egg and cheese mixture over the hot pasta. Stir continuously to create a creamy sauce.
  7. Serve immediately, garnished with chopped parsley and additional cheese if desired.

Notes

For a lighter twist, substitute bacon with pancetta or turkey bacon. Serve with a light arugula salad or garlic bread.
