Instructions
- Cook your pasta according to the package instructions until al dente. Reserve a bit of pasta water for later.
- In a bowl, whisk the eggs with the grated cheese and black pepper until well combined.
- In a pan over medium heat, cook the pancetta until crispy and golden brown.
- Once the pasta is cooked, drain it and add it to the pan with the pancetta, ensuring the heat is off.
- Quickly pour the egg and cheese mixture over the hot pasta, tossing continuously. Use reserved pasta water to create a creamy sauce.
- Season with salt and add more cheese if desired. Serve immediately.
