  • 2 large eggs
  • 1 cup grated Pecorino Romano or Parmesan cheese
  • 6 oz diced pancetta
  • Freshly cracked black pepper

Instructions

  1. Cook your pasta according to the package instructions until al dente. Reserve a bit of pasta water for later.
  2. In a bowl, whisk the eggs with the grated cheese and black pepper until well combined.
  3. In a pan over medium heat, cook the pancetta until crispy and golden brown.
  4. Once the pasta is cooked, drain it and add it to the pan with the pancetta, ensuring the heat is off.
  5. Quickly pour the egg and cheese mixture over the hot pasta, tossing continuously. Use reserved pasta water to create a creamy sauce.
  6. Season with salt and add more cheese if desired. Serve immediately.

Notes

Serve hot with additional cheese on top. Pairs well with arugula salad and white wine.
