- 2 pounds chicken pieces
- 2 tablespoons curry powder
- 1 teaspoon allspice
- 1 onion, chopped
- 3 cloves garlic, minced
- 1–2 hot peppers, chopped (adjust to your heat preference)
- 1 cup chicken stock
- 1 can (13.5 oz) coconut milk
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- Fresh cilantro for garnish (optional)
Instructions
- In a large bowl, season chicken pieces with curry powder, allspice, salt, and pepper. Let it marinate for at least 30 minutes.
- Heat vegetable oil in a large pot over medium heat. Add chopped onion and sauté until translucent.
- Stir in minced garlic and chopped hot peppers; cook for another minute.
- Add marinated chicken to the pot, browning it on all sides for 5–7 minutes.
- Pour in chicken stock and coconut milk, bring to a boil, then reduce heat to low and simmer for 30-40 minutes until chicken is cooked through and tender.
- Adjust seasoning and garnish with fresh cilantro before serving.
Notes
For additional flavor, you can toast the curry powder in the oil before adding the onions. Substitute chicken stock with vegetable stock for a lighter version.
