Instructions

  4. Drain the pasta, reserving some pasta water.
  5. Combine the hot spaghetti with the pancetta in the skillet, removing from heat immediately.
  6. Add the egg mixture, stirring quickly to create a creamy sauce, adding reserved pasta water if needed.
  7. Serve instantly, topped with extra Parmesan and black pepper.

Notes
