Instructions
- Cook the spaghetti according to package instructions until al dente.
- Heat a skillet over medium heat and cook the pancetta until crispy.
- In a bowl, whisk together the egg yolks, grated Parmesan, and black pepper.
- Drain the pasta, reserving some pasta water.
- Combine the hot spaghetti with the pancetta in the skillet, removing from heat immediately.
- Add the egg mixture, stirring quickly to create a creamy sauce, adding reserved pasta water if needed.
- Serve instantly, topped with extra Parmesan and black pepper.
Notes
For added flair, garnish with fresh basil or parsley. A side of garlic bread and a light salad complements the dish beautifully.
