Description

Ingredients

  • 200g spaghetti
  • 100g pancetta
  • 2 large egg yolks
  • 50g grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley (optional, for garnish)

Instructions

  1. Prepare the Pasta: Bring a large pot of salted water to a boil and cook the spaghetti until al dente.
  2. Cook the Pancetta: In a skillet over medium heat, cook the pancetta until crispy.
  3. Whisk the Eggs and Cheese: In a bowl, whisk together egg yolks, grated Parmesan, salt, and pepper.
  4. Combine: Reserve half a cup of pasta water, drain spaghetti, and add it to the skillet with pancetta (off heat).
  5. Make the Sauce: Pour egg and cheese mixture over hot pasta and toss to create a creamy sauce, adding reserved pasta water as needed.
  6. Serve: Dish out immediately, garnished with additional Parmesan and parsley if desired.

Notes

Best enjoyed fresh. Serve warm with a sprinkle of Parmesan and paired with a crisp white wine.
