- 200g spaghetti
- 100g pancetta
- 2 large egg yolks
- 50g grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley (optional, for garnish)
Instructions
- Prepare the Pasta: Bring a large pot of salted water to a boil and cook the spaghetti until al dente.
- Cook the Pancetta: In a skillet over medium heat, cook the pancetta until crispy.
- Whisk the Eggs and Cheese: In a bowl, whisk together egg yolks, grated Parmesan, salt, and pepper.
- Combine: Reserve half a cup of pasta water, drain spaghetti, and add it to the skillet with pancetta (off heat).
- Make the Sauce: Pour egg and cheese mixture over hot pasta and toss to create a creamy sauce, adding reserved pasta water as needed.
- Serve: Dish out immediately, garnished with additional Parmesan and parsley if desired.
Notes
Best enjoyed fresh. Serve warm with a sprinkle of Parmesan and paired with a crisp white wine.
