  • 1 cup milk
  • 1 large apple, grated

  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon vegetable oil (plus extra for cooking)
  • Optional: Chopped nuts or raisins for added texture and flavor

Instructions

  1. In a bowl, whisk together flour, baking powder, cinnamon, and salt until evenly mixed.
  2. In another bowl, mix yogurt, milk, egg, sugar, and vegetable oil until smooth.
  3. Stir grated apple into the wet mixture gently.
  4. Gradually add the wet ingredient mixture to the dry ingredients. Stir until just combined; a few lumps are okay—don’t overmix!
  5. Preheat a non-stick skillet or griddle over medium heat and lightly grease with vegetable oil.
  6. Pour 1/4 cup of batter onto the skillet for each pancake. Cook for about 2-3 minutes or until bubbles form on the surface.
  7. Carefully flip the pancakes, cooking for an additional 2-3 minutes until golden brown.
  8. Once cooked, place the pancakes on a plate and cover them with a clean kitchen towel to keep warm while cooking the remaining batter.

Notes

These pancakes are best served warm with maple syrup and fresh fruits.
