Description

Ingredients

  • 1/2 cup brown sugar

  • 1 large egg
  • 1/4 cup apple cider
  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour

  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup diced apples
  • 1/2 cup powdered sugar (for glaze)
  • 12 tbsp apple cider (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg, then add vanilla extract and apple cider; mix until smooth.
  4. In a separate bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Gently fold in the diced apples with a spatula.
  7. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spaced apart.
  8. Bake for 10–12 minutes or until the edges are golden.
  9. Allow the cookies to cool on a wire rack, then drizzle with the glaze made from powdered sugar and apple cider.

Notes

For added texture, consider incorporating chopped walnuts or raisins. Store cookies in an airtight container for up to a week or freeze for three months.
