Ingredients

- ¾ cup all-purpose flour
- 1 tablespoon granulated sugar
- 1 tablespoon cornmeal
- 2 teaspoons baking powder
- 1–2 teaspoons salt, to taste
- ¾ cup milk
- 1 ½ medium onions, chopped (about 2 ½ cups)
- Oil for frying (vegetable oil), as needed
Instructions
- In a mixing bowl, whisk together the flour, sugar, cornmeal, baking powder, and salt.
- Gradually stir in the milk until you have a smooth batter without lumps.
- Add the chopped onions to the batter and gently fold them in.
- Heat a thin layer of oil in a skillet over medium heat.
- Drop spoonfuls of the batter into the hot oil, flattening each slightly. Fry for 2 to 3 minutes on each side until golden brown and crispy.
- Drain on paper towels and serve warm.
Notes
Optional to add shredded cheese or chopped herbs to the batter. Serve with dips like ranch or sour cream.
