Ingredients

  • 1 cup butter, softened
  • 2 cups granulated sugar
  • 2 eggs
  • 2 cups buttermilk
  • 4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2/3 cup brown sugar
  • 2 tablespoons ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9×5-inch loaf pans.
  2. Cream together the butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Stir in the buttermilk until fully combined.
  5. In another bowl, whisk together the flour and baking soda.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. In a small bowl, mix brown sugar and cinnamon for the swirl.
  8. Pour 1/4 of the batter into each pan, sprinkle 1/4 of the cinnamon mixture on top.
  9. Add the remaining batter and top with the rest of the cinnamon mixture.
  10. Gently swirl through the batter with a knife.
  11. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  12. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Slice while still warm and spread with butter. Pairs well with coffee or tea.
