Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, beat together the almond paste and sugar until well combined.
- Incorporate each egg, mixing until the batter is smooth. Add the vanilla extract.
- Gradually mix in the gluten-free flour until the dough holds together.
- Form small balls of dough and place them on the baking sheets, leaving space in between.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Allow the cookies to cool before transferring them to a wire rack.
Notes
