Instructions

  2. In a large bowl, beat together the almond paste and sugar until well combined.
  3. Incorporate each egg, mixing until the batter is smooth. Add the vanilla extract.
  4. Gradually mix in the gluten-free flour until the dough holds together.
  5. Form small balls of dough and place them on the baking sheets, leaving space in between.
  6. Bake for 12-15 minutes or until the edges are lightly golden.
  7. Allow the cookies to cool before transferring them to a wire rack.
