Description

Ingredients

  • 1 teaspoon baking powder

  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar or coconut sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons almond milk or regular milk
  • Optional topping: 2 tablespoons granulated sugar for sprinkling
  • Optional topping: ½ teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper or grease it.
  2. In a medium bowl, whisk the almond flour, baking powder, and salt together.
  3. In another bowl, beat the softened butter and sugar until light and fluffy, about 3-4 minutes.
  4. Add the egg and vanilla to the butter mixture and mix until smooth.
  5. Gradually combine the dry ingredients with the wet ingredients, stirring until a dough forms. Adjust the consistency with milk if necessary.
  6. Spread the dough evenly into the prepared baking pan.
  7. Sprinkle the top with granulated sugar and cinnamon, if desired.
  8. Bake for 18-22 minutes or until the edges are golden brown and a toothpick comes out clean.
  9. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing into squares.
