- 2 ½ cups almond flour (finely ground)
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- ½ cup granulated sugar or coconut sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- 2 tablespoons almond milk or regular milk
- Optional topping: 2 tablespoons granulated sugar for sprinkling
- Optional topping: ½ teaspoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper or grease it.
- In a medium bowl, whisk the almond flour, baking powder, and salt together.
- In another bowl, beat the softened butter and sugar until light and fluffy, about 3-4 minutes.
- Add the egg and vanilla to the butter mixture and mix until smooth.
- Gradually combine the dry ingredients with the wet ingredients, stirring until a dough forms. Adjust the consistency with milk if necessary.
- Spread the dough evenly into the prepared baking pan.
- Sprinkle the top with granulated sugar and cinnamon, if desired.
- Bake for 18-22 minutes or until the edges are golden brown and a toothpick comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing into squares.
