- 3 large eggs
- 1/4 cup honey or maple syrup
- 1/2 cup unsweetened applesauce
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon baking soda

- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and prepare a loaf pan with parchment paper.
- In a large mixing bowl, whisk together almond flour, baking soda, and salt until combined.
- In another bowl, mix eggs, honey (or maple syrup), applesauce, lemon juice, lemon zest, and vanilla extract until smooth.
- Gently fold wet ingredients into the dry ingredients until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 25-30 minutes, checking for doneness with a toothpick.
- Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
Substitute honey with maple syrup for a vegan option. Make sure eggs are at room temperature for best results.
