  • 1/4 cup honey or maple syrup
  • 1/2 cup unsweetened applesauce
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a loaf pan with parchment paper.
  2. In a large mixing bowl, whisk together almond flour, baking soda, and salt until combined.
  3. In another bowl, mix eggs, honey (or maple syrup), applesauce, lemon juice, lemon zest, and vanilla extract until smooth.
  4. Gently fold wet ingredients into the dry ingredients until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 25-30 minutes, checking for doneness with a toothpick.
  7. Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

Substitute honey with maple syrup for a vegan option. Make sure eggs are at room temperature for best results.
