Description

Delicious and wholesome almond flour cookies that are perfect for satisfying your sweet tooth while maintaining a healthy edge.


Ingredients

  • 1½ cups finely ground almond flour
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp sea salt
  • ½ tsp ground cinnamon
  • 1 large egg (lightly beaten)
  • ¼ cup unsalted butter or coconut oil (melted)
  • 3 Tbsp pure maple syrup
  • 1 tsp pure vanilla extract
  • ½ cup dark chocolate chips
  • 2/3 cup raw walnuts (chopped)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a big bowl, stir together almond flour, baking powder, baking soda, sea salt, and cinnamon until well blended.
  3. In another bowl, combine the beaten egg, melted coconut oil (or butter), maple syrup, and vanilla extract, whisking until mixed.
  4. Pour the dry ingredients into the wet mixture, stirring until everything is just combined.
  5. Gently fold in the chocolate chips and walnuts until evenly distributed.
  6. Scoop generous mounds of dough onto a non-stick baking sheet. Shape them as desired since they won’t spread much during baking.
  7. Bake for 8 to 12 minutes, or until the edges are golden brown.
  8. Let your cookies cool for a couple of minutes before transferring them to a wire rack to completely cool.

Notes

Store leftovers in an airtight container at room temperature for up to 5 days or in the refrigerator for up to 2 weeks. Can be frozen for up to 3 months.
