- 1½ cups finely ground almond flour
- ½ tsp baking powder
- ¼ tsp baking soda
- ¼ tsp sea salt
- ½ tsp ground cinnamon
- 1 large egg (lightly beaten)
- ¼ cup unsalted butter or coconut oil (melted)
- 3 Tbsp pure maple syrup
- 1 tsp pure vanilla extract
- ½ cup dark chocolate chips
- 2/3 cup raw walnuts (chopped)
Instructions
- Preheat your oven to 350°F (175°C).
- In a big bowl, stir together almond flour, baking powder, baking soda, sea salt, and cinnamon until well blended.
- In another bowl, combine the beaten egg, melted coconut oil (or butter), maple syrup, and vanilla extract, whisking until mixed.
- Pour the dry ingredients into the wet mixture, stirring until everything is just combined.
- Gently fold in the chocolate chips and walnuts until evenly distributed.
- Scoop generous mounds of dough onto a non-stick baking sheet. Shape them as desired since they won’t spread much during baking.
- Bake for 8 to 12 minutes, or until the edges are golden brown.
- Let your cookies cool for a couple of minutes before transferring them to a wire rack to completely cool.
Notes
Store leftovers in an airtight container at room temperature for up to 5 days or in the refrigerator for up to 2 weeks. Can be frozen for up to 3 months.
