- 2 cups almond flour
- 1/2 cup cocoa powder
- 1/2 cup sweetener (coconut sugar or erythritol)
- 1/4 cup coconut oil or melted butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, combine almond flour, cocoa powder, sweetener, baking soda, and salt thoroughly.
- In another bowl, blend the melted coconut oil (or butter), eggs, and vanilla extract until smooth.
- Gently fold the wet ingredients into the dry until a dough forms. If using chocolate chips, fold them in now!
- Using a tablespoon, scoop out portions of dough and place them onto the prepared baking sheet, spacing them evenly apart.
- Give each cookie a slight press down using the back of a spoon.
- Bake for 10-12 minutes, until the edges feel firm to the touch.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
