Ingredients

  • 2 cups almond flour
  • 1/2 cup cocoa powder
  • 1/2 cup sweetener (coconut sugar or erythritol)
  • 1/4 cup coconut oil or melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine almond flour, cocoa powder, sweetener, baking soda, and salt thoroughly.
  3. In another bowl, blend the melted coconut oil (or butter), eggs, and vanilla extract until smooth.
  4. Gently fold the wet ingredients into the dry until a dough forms. If using chocolate chips, fold them in now!
  5. Using a tablespoon, scoop out portions of dough and place them onto the prepared baking sheet, spacing them evenly apart.
  6. Give each cookie a slight press down using the back of a spoon.
  7. Bake for 10-12 minutes, until the edges feel firm to the touch.
  8. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
