- 2 cups almond flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 1/4 cup melted butter or coconut oil
- 1 tablespoon honey or sweetener (optional)
- 1 teaspoon vanilla extract (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the almond flour, baking powder, and salt.
- In another bowl, whisk the eggs, then add the melted butter (or coconut oil), honey (if using), and vanilla extract (if using).
- Pour the wet mixture into the dry ingredients and stir until just combined. Be careful not to overmix.
- Using a tablespoon, drop the dough onto the prepared baking sheet, making sure to leave some space between them.
- Bake for about 10 minutes or until the biscuits turn a lovely golden brown.
- Remove from the oven and allow them to cool slightly before serving.
Notes
For optimal freshness, store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for about a week. You can also freeze them for later enjoyment.
