Ingredients

  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/4 cup melted butter or coconut oil
  • 1 tablespoon honey or sweetener (optional)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the almond flour, baking powder, and salt.
  3. In another bowl, whisk the eggs, then add the melted butter (or coconut oil), honey (if using), and vanilla extract (if using).
  4. Pour the wet mixture into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Using a tablespoon, drop the dough onto the prepared baking sheet, making sure to leave some space between them.
  6. Bake for about 10 minutes or until the biscuits turn a lovely golden brown.
  7. Remove from the oven and allow them to cool slightly before serving.
